Pizza Crispy Recipe(indonesia)

KULIT PIZZA OREGANO

Bahan:
A.
600 gr Terigu Protein Tinggi (Terigu Kerang dari LUMBUNG)
400 gr Terigu Protein Sedang (Terigu Sungai dari LUMBUNG)
15 gr Instant yeast


B.
20 gr Gula pasir
20 gr Garam
½ st Oregano
½ st Rosemary

C.
650 gr Air es (suhu 2 – 5 OC)
30 gr Olive oil

SAUCE PIZZA
Bahan:
20 gr Olive oil
20 gr Bawang putih cincang halus
50 gr Bawang bombay cincang
2 lbr Bay leaves
½ st Oregano
1 st Thyme
1 klg Meat spaghetti sauce
1 klg Mushroom/traditional spaghetti sauce
10 gr Seledri cincang
10 gr Basil leaf dresh di-iris
5 gr Garlic powder
10 gr Chicken powder
40 gr Gula pasir
2 gr Merica

BOLOGNESE
BROWN STOCK
Bahan:
3 kg Tulang sapi
150 gr Wortel
200 gr Bawang Bombay
150 gr Seledri
100 gr Bawang daun
8 ltr Air

SAUCE BOLOGNESE
Bahan:
A.
250 gr Minyak sayur
250 gr Bawang Bombay potong kotak
250 gr Wortel potong kotak
200 gr Seledri potong kotak
1.020 gr Tomato paste (8 klg @ 170 gr)

B.
2,5 kg Daging cincang bakar
7 lbr Bay leaves
1½ sm Oregano
1 sm Black pepper
2 sm Garam
4 sm Dashinomoto

C.
5 ltr Brown stock
2 sm Beef powder
6 sm Demiglace + 200 cc Air
3 sm Chicken powder
4 sm Gula pasir

D.
340 gr
Saus tomat (1 btl)

SAUS SALSA
Bahan:
200 gr Tomat dikupas buang biji, lalu dipotong kotak kecil-kecil
1 btl Sauce tomat Delmonte 340 gr (ketchup)
1 sm Bawang putih cincang
2 sm Daun ketumbar cincang
1 st Cabe rawit cincang
2 sm Bawang Bombay cincang
1 st Dashinomoto
1 st Black pepper kasar
2 sm Air jeruk lemon
2 sm Gula pasir
